24 Read 10 Non-Fiction books

A long over due update on the 101 list today.

Over the last couple of weeks I’ve read two more nonfiction books. I’m not going to talk extensively about them because I some know how interested you’ll be :) .  Just trust me.

The first one is Potty Training for Dummies, this is a subject I’ve decided to keep to a minimum here at the blog. I’m not the mom who will tweet photos of Colin on the toilet or even post them here.  I may at some point share the excitement that he is potty trained but if and when I do it will be short.

The second book is Avoiding Miscarriage. I picked this up to sort of calm my mind going into future. Its something that is weighing on my mind as we try for our second baby and this book didn’t do much to calm that. The sad fact is I’ve got little control over it which I hate like a lot!  All I can d is be as healthy as possible and as positive as possible.

There’s the update 2 more nonfiction books checked off. And they weren’t even biographies!

Vegetarian Enchiladas

Last week when Charles was out of town my mom, Colin, and I went over to one of my favorite places, Maria Maria in Tempe.  Since we are all vegetarians in this house now my mom ordered the Vegetarian Enchilads, they were nothing short of AWESOME so we decided we could totally do that at home.  On Saturday I cooked these up and they were even better!  Now once again I’m not big on the measuring so go with your gut, or maybe your mouth, add what you like take out what you don’t.  At the resturant these have mushrooms but since Charles is not a mushroom fan I skipped those.  Also I think this fall I’m going to add some black beans make this a bit more hearty and fall like but these are delicous and filling just as they are.

Here’s how you do it at home

Chop up

  • one red onion
  • hand full of fresh cilantro
  • 2 anaheim chillies
  • one red pepper
  • handful of spinach
  • 2 cloves of garlic

Mix them all up in a skillet with a splash of oil, I used canola oil and one lime worth of lime juice.  I also added a little salt and pepper.  I didn’t sauté because I wanted the crunch of the veggies but that’s a personal choice.

Another fabulous feature was this creamy enchilada sauce that was on it, to achieve that I picked up a can of red enchilada sauce (we use the Macyao’s brand but use what you like) and added sour cream over a medium heat little at a time make sure it was well mixed in.

The nice thing, is you can add as little or as much as you like to help cut down the heat, I made it still pretty warm because we like spicy, and Colin wasn’t eating the sauce.

Finally put them together, we used fresh corn tortillas, spoon in a little mixture and add some cheese then roll.  I did three to a plate and then covered with sauce and a little more cheese, then we put the plates in the oven for 5 minutes at 400 degrees.  Now you could totally make these in a pan, but I wanted pretty like at a restaurant so we did them in servings.  Which I will always do because it’s just really easy.  Basically this last step you just want to melt the cheese since everything is already warm

By the way, the sauce is not as pink as it looks in this picture, the light was making it weird.

All in all it took about half an hour and was one of the best things I’ve made in a while, it was yummy!

Let’s Lose Week 50

This week was good, about the same weight wise, although sort of down because I gained and lost 2 lbs this week lol.  We ate out a lot because we were running around a lot since Charles.  I know I say this all the time, but I seriously need to run, my back is starting to hurt again and I know it’s because I’m not running.  Hopefully this heat will let up a bit and I can get my butt out of bed in the morning for an early run…wish me luck.

Photo Friday

This obviously is not a revival of Photo Friday, but with Charles out of town this week I both didn’t post much and had some pretty awesome adventures with my mom and Colin.  As a result there are some cute photos. Enjoy!

This was Colin’s first time on one of these little rides, LaLa (my mom) and I were talking about how it was his training for our trip to Disneyland in January.  He LOVED it!

Another one of my famous random toy purchases, but this one has a dual purpose because it’s also part of his halloween costume.  He’s going to be Handy Manny for halloween so he clearly needed the tool belt.  LaLa and I will be crafting a tool box to carry his candy since this will be the first year I let him trick or treat.  Granted it will only be around the block before we come home to pass out candy I mean the kid will only be 2!

Another one of those little rides, this one was outside of Toys R Us this morning.

I haven’t really updated on how he’s doing in a while and I think some of you like to know so I’ll share.  He’s FABULOUS, he’s talking up a storm and is a serious echo, anything you say he says…for better or worse!  Although we haven’t had cussing yet so I’m pretty impressed.  He’s getting so big he’s wearing size 7 shoes now and 3T clothes, it’s craziness!  He runs and runs, he loves to throw the ball in the backyard fully encouraging LaLa’s dream that he’ll play big league baseball one day :) .

This MUST Be Spoken of…OFTEN

Wednesday night I couldn’t sleep, so I was flipping around the tv and something strange happend, I stopped on Oprah.  Now I have nothing against Oprah I just don’t usually watch the show, I do enjoy her favorite things episodes but she shows some fun stuff.  Anyways I’m getting distracted, she was talking about the documentary Food, Inc.  Now after watching the episode I was amazed by what I learned, honestly it really fueled my growing desire to eat local, eat fresh, and not eat meat.  Then Thursday morning I streamed Food, Inc. on Netflix while doing some work and I was amazed.  I was actually in tears at one part when a mother was talking about her 2 and a half year old dying from E coli.  I decided right then that Colin is gong vegetarian with me.  I know there has been E coli incidents with produce as well due to the run off from the fucked up factory farms but that is where the local comes in.  I already buy 90% of my produce at the Phoenix Public Market or through Bountiful Baskets.  So I’m off to a good start there, the biggest change is my whole house is going vegetarian, so Charles, Colin, and my mom will all be meat free as well.  We’re still not going vegan although I might at some point but I’m going to make every effort to by local dairy products where I see the farm and I see where it comes from.

I know I’m a bit late, but if you haven’t seen it you should.  Everything I read says it will change the way you eat and I hope it does because the way it’s going is bad, not only for the animals or the consumers, but the planet and the workers.  So please watch the film and change the way you shop for food and the way you eat.  It’s not necessarily going to make you want to go vegetarian, it talks about great farms that are grass feeding the animals and are farming the right way, vegetarianism is just the best choice for us.

I had no idea

Until I decided to look up my first Let’s Lose post and see the photos I didn’t realize I started Let’s Lose on August 9, 2009!  Now I was thinking, wow a year and I’ve only lost 23 pounds, that’s sort of crap, but I’ve also become a lot healthier and when you look at the pictures I see a big difference.

Here is August 2009

Notice the extra fat around the elbow, and also the HUGE belly, I seriously look 6 months pregnant.

Here is August 2010

Notice the only large belly, not HUGE, still not where I want to be but so much better.  Now my butt does look bigger in this picture but a part of that I think is the shirt in the other photo, also my thighs have thinned out significantly.  In real life my butt is shrinking, it’s also perkier.  My arm is so much thinner it’s hard to even imagine.  No extra elbow fat and I’m in a normal bracelet size now, which is important to girls right, it’s not just me?

Over all, one year several inches, not as many pounds as I would like but it’s been a hell of a year that also included a pregnancy, a miscarriage, starting running, my first 5k, and going vegetarian….I rarely cuss here (like not nearly has much as I do in real life) but holy shit!

Portobella Quasadilla

As I shared in this weeks Let’s Lose I will be working on adding some variety to my vegetarian dishes and sharing that here.  Also as a reminder I am a Lacto-Ovo Vegetarian so I eat dairy and eggs.  Basically my rule if the animal must die, I don’t eat it.  So cheesesthat use animal remnant I don’t eat but cheese that use vegetable remnant I do eat..  Also we drink almond milk instead of cows milk.  Anyways I haven’t made anything new this week but I wanted to share this new one from last week with you.  Remember a few weeks ago my mom and I had a girls night and I raved about that Quasadilla at Margaritaville?  Well we made one and it’s even more awesome at home :)

What you need – And remember I’m not big on measurements when I cook, I’ll do better when it’s necessary but for this one we made it up as we went so everything is to taste.

  • wheat tortilla wrap (or you can use flour if you choose)
  • cilantro
  • portobella chopped up – or baby bellas work really well too
  • cheese – I use colby jack because it’s usually around and I like it :)

Lay the tortilla flat on half of it add some cheese, the cilantro, and mushrooms then a bit more cheese and fold.  I put mine in a grill basket like for veggies and hubs throws it on the grill for a few minutes and it’s perfect.  You can thorough it straight on the grill it’s just easier to keep contained in a basket.  Remove and enjoy!

Everyone Loves Extra Money, So do the ChaCha!

Last week I finally took the test and got started on something I had actually applied for a while back and that is ChaCha!  Last week I took my test and passed (whoohhooo) and I got started on Friday.  And I don’t know what you guys did but I made $20 bucks sitting on my laptop.

Before I go any further I suppose I should share what ChaCha is, it’s a text service (free to users) that allows people to text (242242) or call (18002ChaCha) and have the answer sent back to you.  As a guide (that’s what I do) you get these questions answered.  Different types of guides are paid differently and have different tasks.  I’m an expediter which means I answer the question if I can quickly otherwise I send it on to a specialist.  I’m paid $.02 a question, which is admittedly not a ton of cash but like I said I managed to rack up $20 this weekend which in my book is nothing to sneeze at considering I would have been on the computer doing something far less constructive.  It is absolutely one of those things you get in what you put out but it’s a great way to slowly save up for a trip or new toy you’ve been wanting to buy!  I’m saving up for our tickets to next years MLB All Star game which will be here in Phoenix, and then just tossing money into savings for extra holiday cash, and our big Disneyland trip in January.  On weeks I’m busy with school and I don’t have time, I do nothing, on weeks where I’m light on schoolwork and heavy on time I load up.  I set my own hours and work as much or as little as I want to.
